To Asheville for Sandwiches and Baked Tofu

Updated: Sep 18, 2023

Rosetta's Kitchen, Asheville, North Carolina

We started with ordering the Family Favorite which is baked peanut butter tofu with kale, gravy, and mashed potatoes. The peanut butter made the tofu creamy and fatty. The texture was perfect even with the big chunks. There was a lot of peanut butter which makes one think it would be dry but it was not. A flaw in using peanut butter was the overpowering taste in a few bites, which some people may love. I would like to see the peanut butter mixed with a breading so each bite is consistent because some bites had very little flavor. The pairing was great, though you lose the peanut butter flavor with the gravy. Overall I enjoyed this dish.

The rating for the Family Favorite is:

Tofu: 3.5

Whole Dish: 4

We also had the Organic Tofu and Avocado Sandwich. The tofu was baked again and was savory and firm. The thickness of it in the sandwich gave it more texture. If they would’ve used thinner slices it wouldn’t have been as hearty of a sandwich. There was also a ranch sauce on it, although it was not super creamy, it did give the tofu more flavor. If one tries the tofu by itself, the smoked flavor really comes out, which some in the party absolutely loved. The sauce and avocado mix makes it difficult to taste the tofu when eaten together. Overall we enjoyed this dish and would order it again, though more tofu would be enjoyed.

The rating for the Tofu and Avocado Sandwich is:

Tofu: 4

Whole Dish: 4

This is beautiful, George. The pictures are gorgeous and I like your evaluation of the dishes and your explanation of how to cook the ones you have a recipe for. Great job!
