Wild Cow, Nashville, Tennessee
Every time we visit Nashville we always come here. They have outdoor seating and accept pets, even big dogs that shed lots of fur were welcome. They love dogs so much the staff brings water to our pup before they bring it to us most times! It's also near the Fatherland District which is a lot of small local shops one can look at when waiting for your seats, because sometimes Wild Cow is pretty busy. We were pleasantly surprised that there is also a vegan biscuit shop in this District as well, which of course we visited!
Disclaimer: we really only come here for the ruben sandwich--where we are never disappointed. This time around we tried the Buffalo Tofu which was a possible side for the ruben. Of course we had to try it, though sadly when writing this we found out that the buffalo tofu side has been discontinued (although they may still serve it in a wrap). My first reaction was that the Buffalo Tofu was a 5 out of 5 because the taste was incredible. The buffalo sauce wasn't just a hot sauce, it packed so much flavor in each bite and it wasn't so hot that you couldn't taste the tofu. It's a baked tofu that was grilled perfectly for excellent texture--soft on the inside, firm on the outside, to balance the two textures.
I had to talk to the chef about the side dish and learned Wild Cow uses a house-made sauce and they said the ingredients were a secret! Bah! They did tell me a little about how the tofu was made, so I was partially satisfied but that too is a secret! Also served with the side was a ranch dip and we learned if you prefer non-hot food this is great way to subdue the hot parts of the buffalo sauce.
To wrap it up, the food we bought was amazing like always when we come here and it fills one up. This place definitely knows how to make tofu (and ruben!!). If you need to show a family member what real tofu tastes like come here!
